Join us at the beginning of the olive harvest to discover the world of olives, pressings, oil and experience the local life at this busy time of year. Unravel some of the mysteries of this strange fruit; inedible from the tree yet a prized, healthy ingredient, which at one time was a bigger industry than petrochemicals is today.

Arrival. Explore your surroundings and settle into your beautiful accommodation at Trullo Solari. Meet your fellow guests over a delicious welcome dinner.
After an overview presentation to introduce you to the world of the olive, we'll hand pick a few fruits and cure them, to start the process to make them edible.
This morning we'll start a proper harvest and pick a couple of hundred kilos of olives. Then after a good lunch we'll take them to the mill and watch oil being made, amongst the frenzy of locals with their mountains of olives.
Back to the mill to collect our oil, and in the relative peace of the morning we'll have a proper tour to see the full process, followed by an olive oil tasting. Then we'll escape for a well-earned rest at the beach with a seafood lunch.
A day at Trullo Solari, playing with olives. We'll make olive foccacia in the pizza oven, tapenade, and olive oil soap.
A full day trip to Gallipoli, once the centre of the olive oil industry. After a visit to the fascinating olive oil museum, we'll enjoy lunch followed by a visit to Lecce.
After a relaxed morning we'll tour local Ostuni, followed by a visit to a nearby organic Masseria (farm house) to learn the secrets of local wild plants, see the original olive press and enjoy a gourmet farewell dinner.
